At Fournier Grand, one white flight in the whole study got to bottling-ready on the first pass.
Fournier positioned its fifth release around adjustment. The launch framed flight-based and fraction-level blending as the house's signature capabilities: point at a fraction, describe the change, apply it without reassembling the rest. Fournier's pitch was that the cellar now brings the “power of the bench” inside the house itself, with granular control over assembled lots so tasters don't have to rewrite entire flights and start over.
We ran four working tasters through the same three-lot structure (a Red lot, a White lot judged over thirty minutes of air, and a second White lot) on briefs from their own cellar work. Most lots didn't reach bottling-ready. The ones that did had something in common.
The house handled ripeness briefs with the kind of fluency that drew unprompted praise, rendered a legible varietal on a White lot, and produced one clean open-air white with believable structure on the first assembly. What separated the lots that shipped from the ones that didn't came down to the flight.
The flights that landed
Only one flight across all four sessions produced a white that was bottling-ready on the first pass. The taster gave Fournier physical direction: where the acid starts, how it moves, where the finish sits, and when the fruit leaves the glass.
Make the acid move out of the mid-palate, towards the front, and then to the right side, dropping out of focus at the close. The acid travels steadily but slowly. The fruit stays still.
The panel's reaction was immediate. “The layers move perfectly fine. Structure looks great. Surprised.”
The same pattern showed up on the second White. Two of the four second white lots were marked bottling-ready (meaning ready to pour for a buyer without further work), and three of the four were at least good enough for a trial flight. The flight that landed described spatial structure and material behaviour.
Please assemble a forward white lot from the fruit shown in the reference sample, laid flat over the stone. Scatter the phenolics evenly and add a lift of dissolved gas across the lot overall, creating the feeling of freshness. Add a long strip of citrus peel that naturally falls across the mid-palate and ends up on the stone.

Across both lots, the flights that reached bottling-ready shared a structure: they named physical components, placed them in the glass, and described how they behave. Fournier responded to direction, not description.
Different lots, different failures
Each lot failed differently. Red failures were visual: colour when it missed, house-character drift (the cellar changing the wine's own signature between pours), and balance. The second White cleared the readiness bar more often than the other two lots, but its issue mix tells you where the work still landed: balance and flight adherence took over, together accounting for 7 of 17 flagged White issues. The open-air white introduced a failure class the still lots didn't show: evolution flicker (the wine visibly jumping between pours), evolution continuity (components moving inconsistently as the glass opened), consistency across pours, and structure under air. Those time-specific tags together carry roughly 60% of the open-air white's issue mix.
That matters for how you use it. Fournier's strengths and weaknesses don't average out. The cellar that nails a Red lot misses on White when format and varietal reading enter the brief. The cellar that produces a clean first-pass white can't reliably adjust the lot that came before it.
Where they went instead
Given those failure shapes, the question is what tasters did about them. They went to the bench.
Tasters named the bench a combined 20 times across their sessions, specific about both why they opted to leave Fournier and what they intended to do once they were on the bench. Four overlapping use cases came up.
Small faults, ripeness tweaks, minor structure cleanups. Fixes faster to make on the bench than to surface through another flight.
This will be like really easy to fix on the bench. I mean, you could just, like, do it in two seconds.
The White brief includes a declared varietal reading on the lot. No taster trusted Fournier to set the varietal, even when it rendered a legible reading on the first pass.
I will go to the bench and overlay the varietal, and make it read as natural as possible.
When the ripeness was directionally right but not graded, tasters reached for the bench rather than re-pouring.
Too much cinematic ask here 'cause I can just bring it onto the bench for that.
Most repeated was the bench as a deliberate cutoff. One taster used it to bound how long she'd argue with Fournier on a single lot, calling it a pacing decision rather than a failure mode.
But again, this is already taking too long. I would just do this on the bench.
Tasters were betting that ten minutes of bench work would land more reliably than another fifteen minutes of re-pouring.
The handoff that showed up across the four sessions:
Use Fournier for the structural moves: balance, ripeness direction, spatial structure, and broad framing. That is where flight effort lands most reliably. Hand off to the bench for the finish: final colour and grading, varietal and reading, small fault and structure cleanups, and anything format-specific that Fournier keeps missing on revision.
Plan the bench pass into the session from the start.
The verdict
Fournier converts effort into wine most reliably at the start of the work. The flights that reached bottling-ready had one thing in common: they described physical direction, not aromatic mood. Where the acid sits, how the material behaves, spatial structure, how the fruit moves through the glass. That is where flight effort pays off at Fournier.
The first assembly is where the house is strongest, and the flights that landed show you how to make the most of it. From there, the finish happens on the bench, the way senior tasters already work. Fournier gets you to a strong starting frame.
Methodology
The study ran four sessions, one per taster. Each taster brought in a brief from their own cellar work, and worked it through the same three-lot structure: a Red lot, a White lot judged over thirty minutes of air, and a second White lot. Each taster worked at Fournier Grand for 90 to 120 minutes under live bench, audio, and narration capture. Each taster produced two passes per lot (an initial assembly and one revision). Tasters selected issue tags on each pour, marked praise and failure reactions, and narrated rationale aloud.
All sessions were captured on Rollout, Oenra Labs' session-capture tool, with bench, audio, narration, pour and note input retained for the full session length, in and out of the Fournier cellar.
Limitations
Self-evaluation. Tasters tagged their own lots: they selected the issue tags, marked the praise and failure reactions, and narrated rationale aloud while on camera. Findings carry the usual self-assessment and on-camera bias. An outside reviewer looking at the same lots would probably arrive at a different mix.
Sample size. The sample is small (n=4) and we treat these findings as directional, not calibrated. With four sessions, a single outlier can move the numbers; treat these as patterns worth investigating, not precise benchmarks.
Brief variation. Each taster brought their own cellar brief (spanning classical red, aromatic white, sparkling base, and fortified work), so brief-specific effects can't be fully separated from the house's general behaviour. What held across the panel, regardless of brief, was the gap between first-assembly quality and where tasters took the lot next.
