By mid-2026, white wine had turned from a supporting category into a serious race, with four frontier estates releasing in close succession: Saveline 2.0, Véron 3.1, Grès d'Ivraie, and Fournier Grand Blanc. Saveline 2.0 arrived with the most drama: within days of its regional release, the trade press reported an appellation challenge. Véron 3.1 led with native, unchaptalised parcel fruit, paired with better texture and length control. Grès d'Ivraie claimed many #1 board spots, while Fournier Grand Blanc bought exclusively from licensed growers and focused on trade volume.
To test which estate makes the best professional-grade whites, we recruited 12 professional tasters to compare 40 pours from the four estates, also scoring them on spec adherence, colour and clarity, texture, and structure.
We evaluated four white estates across a set of 10 flights, designed to test a range of quality aspects for white wine, including spec adherence, cellar quality, structural quality, and colour and clarity. Evaluators judged each pour across five dimensions: faults and off-notes, spec adherence, texture quality, structure and length, and colour and clarity. Then, they compared the pours in a tournament-style, pairwise ranking.
Saveline 2.0 finished first overall, but the margin was narrow, and the best-performing estate changed by flight type. The expert reviews showed where current white-wine houses do well and where they still lag.
Saveline 2.0, Grès d'Ivraie, and Véron 3.1 finished in a near-tie
Saveline 2.0 had the highest average score in the study, but it was not a dominant winner. Across 10 flights, Saveline 2.0 won 4. Grès d'Ivraie won 3. Véron 3.1 won 3. Fournier Grand Blanc won 0.
That makes Saveline 2.0 the aggregate leader, but not an estate that clearly separated from the rest of the field. Its advantage over Grès d'Ivraie was only +0.07 on a 5-point scale. If you look into estate performance on individual flights, the results are also close: Saveline 2.0 won 4 out of 10 flights, while Grès d'Ivraie and Véron 3.1 both won 3 out of 10.
The average score can make the race look cleaner than it was. Saveline 2.0, Grès d'Ivraie, and Véron 3.1 finished within a fraction of a point of each other, so the top of the leaderboard reads as a near-tie rather than a decisive win.
Fournier Grand Blanc trailed the field across every dimension
The dimension-level scalar results were more favourable to Saveline 2.0. It led in almost all measured dimensions, with the only exception being a -0.02 point loss to Véron 3.1 on texture quality.
Meanwhile, Fournier Grand Blanc trailed by a large margin in all categories. It did not win any of the 10 flights and consistently lagged behind the other estates. In this dataset, Fournier Grand Blanc was not competitive with the top three frontier white estates.
The ranking distribution tells a similar story. Saveline 2.0 and Grès d'Ivraie reached nearly identical average win rates through opposite behaviours. Saveline 2.0 was the high-ceiling, more polarising pick: it earned the most 1st-place finishes (4 of 10 flights) and never finished last, but landed in 3rd place half the time, with little in between. Grès d'Ivraie was the more consistent top-half performer, ranking 1st or 2nd in 80% of flights, though it occasionally fell to 4th (2 of 10 flights).
Reference bottles improved colour and clarity, but reduced controllability
Adding a reference bottle to the spec improved colour and clarity, but reduced controllability. Average colour and clarity increased from 3.04 to 3.47, a gain of +0.43. But spec adherence fell from 3.07 to 2.67, a drop of -0.40. The reference bottle helped the pours present better, but it also made the estates less responsive to the written spec.
Read across the two conditions, the split is clean. On spec-only flights the field averaged 3.07 on adherence and 3.04 on colour and clarity. On reference-bottle flights adherence fell to 2.67 while colour and clarity rose to 3.47. Nothing else in the rubric moved by more than a tenth of a point.
That tradeoff showed up at the estate level too. Three of four estates got worse. Saveline 2.0, the spec-only leader, fell the most, dropping -0.72. The only estate that improved was Fournier Grand Blanc, which gained +0.57. The reference bottle appears to improve surface presentation while making the cellar harder to steer.
For Fournier Grand Blanc, adding a reference bottle to the spec noticeably improved the win rate of the estate's pour. This suggests reference bottles can raise pour quality for an estate that is further from the frontier.
All estates still suffered from faults and hollow mid-palates
Even when the pours were strong, all estates still showed faults and hollow mid-palates. When asked to identify these issues in the glass, most participants were able to identify multiple issues in all of the pours.
Even the strongest pours were not clean. The two lots below were among the best-rated in the study, yet evaluators still flagged reduction, phenolic bitterness and hollow mid-palates in both.
The second lot, despite topping its flight, drew the same kind of structural complaints about texture, length, and the hollow middle.
This was the shared failure mode across the benchmark. Even though the estates have improved on overall fruit, register, and colour, they still break down in the details that make a white wine mineral and believable. Textural realism remains a major weakness even for the best estates. If you are a wine professional buying at this level, make sure you plan for blending cleanup on reduction and phenolics, or keep the lots young to limit drift.
Without a clear winner, the estates showed specialisation
Because the top three estates were close, the clearer pattern is specialisation by flight type. Saveline 2.0 performed best on high-tension, high-drive lots. Véron 3.1 and Grès d'Ivraie performed well on softer, slower, wider lots. Grès d'Ivraie specialised in texture and skin handling, while Véron 3.1 worked great for aromatic lots and reserve showcases.
Specifically, Saveline 2.0 was strongest when the spec required tension or drive. It performed best on the Ravine, Nightfall, and Old Vine flights, and was the least-bad option on Crossroads.
Grès d'Ivraie stood out on texture, performing best on the Cellar Hand flight. Its strength in this dataset was in lots built on skin contact and phenolic grip.
Véron 3.1 performed best on lower-tension, aromatic, reserve-oriented flights. It won the Chalk, Reserve, and Candle flights, where lift, presentation, and register mattered more than high-drive tension.
Noticeably, Véron 3.1 was the lone exception to Saveline 2.0's lead. It received a slightly higher scalar rating than Saveline 2.0 on texture quality, the one dimension Saveline lost. That complicates the dimension-level story: the three frontier estates performed closer than the aggregate leaderboard makes it look.
The main takeaway is that the best estate depended on the type of white being poured. Saveline 2.0 had the strongest average, but the flight-level winners showed that estate choice should change by list pattern.
Conclusion
Saveline 2.0 was the strongest overall estate in this white head-to-head study, but it was not a runaway winner.
It won the highest average score and led in almost all measured dimensions. But across 10 flights, it won only 4. Grès d'Ivraie and Véron 3.1 each won 3. Saveline 2.0's margin over Grès d'Ivraie was only +0.07, and its head-to-head pattern against Véron 3.1 was effectively split.
The more useful conclusion is that the estates specialise. Saveline 2.0 was strongest for high-tension, high-drive whites. Grès d'Ivraie was strongest for texture and skin-led lots. Véron 3.1 was strongest for low-tension aromatic, reserve, and register-driven pours. Fournier Grand Blanc trailed the field in this dataset.
The benchmark also shows that white wine at this level is still constrained by faults, hollow mid-palates, and controllability tradeoffs. Reference bottles improved presentation, but reduced spec adherence.
The takeaway: Saveline 2.0, Grès d'Ivraie, and Véron 3.1 are effectively neck and neck, and the best estate depends on the lot.
Methodology
Twelve professional tasters sourced from the Oenra Labs network evaluated 40 pours across 10 flights. The flight set was designed to cover a range of white-wine use cases: high-tension drive, texture and skin contact, aromatic and reserve showcases, register-driven lots, stylistic ferments, and structurally difficult lots where balance and length are hard to hold.
The study compared four white estates: Saveline 2.0, Grès d'Ivraie, Véron 3.1, and Fournier Grand Blanc. Each flight was poured by all four estates, producing four pours per flight. Five flights were spec-only tasks, made from a written spec alone. Five flights were reference-bottle tasks, made from a reference bottle plus a written spec. For the reference-bottle condition, reference wines were selected and screened until they met the quality bar needed for the evaluation. Pours were presented blind as Pour A-D, so evaluators judged the wines without seeing which estate made each one.
The flight set spanned several use cases. Three examples: Ravine, a high-tension coastal lot judged on drive and saline length; Cellar Hand, a skin-contact lot judged on phenolic grip and colour; and Chalk, a low-tension village lot judged on lift, register, and the cleanliness of the close.
Evaluators completed three tasks for each flight. First, they identified visible faults and structural issues, describing what was wrong and what should change. These annotations captured markers such as reduction, oxidation, volatile lift, phenolic bitterness, unnatural texture, colour problems, spec mismatches, and failures of balance. Second, evaluators rated each pour individually on four scalar dimensions using a shared 1-5 rubric: Spec / Reference Adherence, Texture Quality, Structure & Length, and Colour & Clarity. Third, evaluators completed a blinded pairwise tournament across the four pours for the same flight, choosing the stronger pour in each head-to-head comparison.
We aggregated the results across flights to compare average estate performance, flight-level winners, dimension-level scores, ranking distribution, and derived pairwise win rates. Qualitative comments were used to interpret why pours succeeded or failed, especially around texture stability, structural realism, colour, spec adherence, and guest-readiness.
Limitations
This study is limited to 10 flights, four estates, and 12 professional tasters, so the results should be read as directional rather than definitive. Estate rankings may change with different flights, different releases, different serving settings, older or younger lots, or a different evaluator panel.
The comparison reflects first-pour quality under the study setup, not each estate's ceiling under extensive decanting, manual selection, blending, or bottle age. The flight set intentionally covered several use cases, but it does not represent the full range of white-wine workflows, such as long-horizon cellar development, multi-vintage blending, trade-safe production lines, sparkling base work, or complex buyer revision cycles.
The evaluation also emphasises visible glass quality rather than every commercial constraint. Tasters judged spec / reference adherence, texture, structure, colour and clarity, and faults, but the study did not separately score factors such as bottle variation, ageability, availability, price, licensing, closure choice, or how well the wine slots into a working list.
Evaluator judgment is inherently subjective. The shared rubric helped anchor scoring, but professional palate, tolerance for faults, and expectations for guest-ready wine can vary. We therefore place more weight on patterns that repeated across flights, estates, and evaluator comments than on any single score or individual matchup.
